Indian Cuisine 

Indian cuisine reflects an 8,000-year history of various groups and cultures interacting with the Indian subcontinent, leading to the diversity of flavors and regional cuisines found in modern-day India. The foods of India are better known for their spicyness. Throughout India, be it North India or South India, spices are used generously in food. But one must not forget that every single spice used in Indian dishes carries some or other nutritional as well as medicinal properties. Food in north India is famous for its unique taste and variety of foods. Rajasthan represents the dessert flavor of Indian food. Here, an immense variety of dals and achars (pickles or preserves) is used, which simply substitutes for the relative lack of fresh vegetables in these areas.

In states like Maharashtra, the food is usually a mix of both north and south cooking styles. Here, people use both the rice and the wheat with the same interest. Along the coastline of Mumbai, a wide variety of fish are available. Some of the delicious preparations include dishes like the Bombay Prawn and Pompfret.

In Goa, which is further down towards the south, one can notice Portuguese influence in the cooking style as well as in the dishes. Some of the major dishes of this region are the sweet and sour vindaloo, duck baffad, sorpotel, egg molie, etc.

In southern India, Kerala, some of the delicious dishes are lamb stew and appams, Malabar fried prawns, idlis, dosas, fish molie, and rice puttu.
